Granola and Granola Bars

Given to me by one of my friends :) 




GRONOLA RECIPE
½ C. OLIVE OIL
½ C. honey
2tsp vanilla
4 c. oats
2/3 c. sunflower seeds (raw and unsalted)
1 c. raw almonds chopped (optional)
4 tsp. cinnamon
1 tsp cloves
2 c. dry fruit
Preheat oven to 325
In small saucepan, combine oil, honey and vanilla. 
Stir over low heat until combined, about 1-2 min
Combine oats, seeds, almonds and spices directly on 11x7 jelly roll pan
Bake for 10-12 min. or until golden brown, stirring and spreading every 3 min.
Mix in Fruit





GRONOLA BAR
2/3 C. sunbutter
½ c. honey or brow rice syrup
¼ c. butter or coconut oil
2 tsp. vanilla
3 c. oatmeal
½ c. sunflower seeds (raw)
1/3 c. coconut (raisins, chocolate chips, sesame seeds) all or known –optional
Saucepan melt oil and sunbutter on low –once melted shut off
Add rest ingredients, stir and put into a long baking pan
Bake at 325 for 20 min

This one is really good!!! -Raw or baked-- but remember to keep it in the fridge if you don't bake it!

Quaker Oats Vanishing Oatmeal Cookies

I Love these Cookies! They are so moist a chewy, you can't get enough :)
Ingredients:
  • 1/2  pound (2 sticks) margarine or butter, softened




1  cup firmly packed brown sugar
  • 1/2  cup granulated sugar
  • 2  eggs
  • 1  teaspoon vanilla
  • 1-1/2  cups Pamela's Gluten Free Flour Mix*
  • 1  teaspoon baking soda
  • 1  teaspoon ground cinnamon
  • 1/2  teaspoon salt (optional)
  • 3  cups quick or old fashioned Oats (make sure the oats are gluten free)*
  • 1  cup raisins
  • 1 cup chocolate chips*

  • Heat oven to 350°F.
    In large bowl, beat together margarine and sugars with electric mixer until creamy. Add eggs and vanilla; beat well. In medium bowl, combine flour, baking soda, cinnamon and salt; mix well. Add to margarine mixture; mix well. Stir in oats and raisins; mix well.
    Drop by rounded tablespoonfuls onto ungreased cookie sheets.
    Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Favorite Muffins

I have adapted this recipe from the Betty Crocker cookbook to make it gluten free :) 


2 Eggs
1 cup milk
1/4 butter, melted
2 cups Pamela's Gluten free Bread Mix and Flour Blend* 
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt


Heat oven to 400. Grease bottoms of 12 medium muffin cups (2 3/4 inches in diameter). Beat eggs; stir in milk and butter. Mix in remaining ingredients just until flour in moistened. Batter should be lumpy.
Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan. 
Yeild: 12 muffins




I highly recommend this variation.
Apple Muffin: stir in 1 cup grated apple with the butter and add 1/2 teaspoon cinnamon with the flour. bake 25-30 minutes. If desired, before baking, sprinkle tops with Nut-Crunch Topping: Mix 1/3 cup brown sugar (packed), 1/3 cup broken nuts and 1/2 teaspoon cinnamon.

Amazing Baked Spaghetti

16 oz bag of Gluten free noodles
2- 15oz cans Tomato sauce
6oz can Tomato Paste
1 lb Pork Sausage
1 1/2 tsp Seasoning Salt
2 tsp Basil
4 oz Prepared Garlic Garlic dip*
4oz Mozzarella Cheese
4oz Grated Parmesan Cheese

Preheat Oven to 400 Degrees. Brown sausage, add seasoning salt, basil, paste, and sauce until smooth and bubbly. Add garlic, garlic and mix well. Coat noodles with sauce, layer with both cheeses. Bake until bubbly and cheese is melted. 

* Tastfully simple makes this product, or you can do 1/4 cup Real Mayo 1/4 cup sour cream, 1 1/2 tsp minced garlic 1 tsp minced onion. 


The Inspiration

The inspiration for this blog came in the middle of the night (of course! ) when I was waiting for my son to fall back to sleep after eating. Earlier that day I had been thinking about compiling all my recipes I have created, honestly I wouldn't know where to start or what to write as it all comes out of my head and into the pan without being written down.
While I was awake I also decided to create or try recipes for all of you who have to, or would like to eat gluten free. All of the recipes I use or "create" can be made gluten free or non-gluten free. I have 2 small children so nothing can be to complicated in my life right now therefore, EASY is what all of these recipes will be! I try to eat as healthy as possible but don't go over board (even though I would like to at times).
